Air Fried Chicken
1 lb, boneless, skinless chicken thigh
spray avocado oil
2 teaspoons smoked paprika
1/2 teaspoon cumin
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
pinch of sea salt & pepper
Set air fryer to 400F, or set your oven to 420F.
Lightly spray chicken with oil, then add spice blend. Rub it all over the chicken. (For best results, let it marinate for at least 20 minutes or overnight in the fridge.)
Add the chicken to an air fryer basket, or a baking tray (lined with parchment or foil).
Air-fry for 12 to 15 minutes OR bake for 16 to 20 minutes.
Garlic Spinach Quinoa
4 cloves garlic finely chopped
1 cup chopped spinach
1 tsp lemon zest
1 cup cooked quinoa
Heat oil (olive or avocado) a medium sized saucepan (with a lid) over medium heat. When hot, add in the chopped garlic. Cook until tender.
Add in the chopped spinach and lemon zest. Turn heat to low-med with the lid on and let stand for 2-3 minutes, until the spinach has wilted
Add in the cooked quinoa and stir to combine. Cook until just heated.
